Sagemary Salt
Suggested Uses and Recipes
Serves 4 to 6

These scrumptious patties are very quick to put together. If you have vinyl foodservice gloves, wear them
to mix the sausage. Your hands are the best for mixing. Serve with pancakes or your favorite eggs
scattered with extra Sagemary Salt.

2 lbs. ground pork
2 tsp. Sagemary Salt
1 tsp. freshly ground black pepper
½ tsp. chopped fresh thyme leaves, optional
¼ tsp. ground allspice
¼ tsp. ground nutmeg
2 large eggs
1-2 TB Oil

Place all ingredients in a bowl and mix well. Heat some oil in a large skillet over medium-high heat. Spoon
sausage into skillet and flatten to form a patty. Brown well, turn over, and brown second side. Remove to
a plate lined with paper to drain and serve.

Tenderloin of Beef on Toast with Sagemary Salt
Makes 12 toasts

This is an easy, yet elegant hors d’oeuvre. For a variation, change the flavor of the butter using other didi
davis food salt blends.

4 TB unsalted butter
1 tsp. Sagemary Salt
1 tsp. tomato paste, optional
Squeeze or two fresh lemon juice
Freshly ground black pepper
6 slices white bread (halved) or 12 slices baguette
1 one-pound piece of beef tenderloin, cut into 12 slices

Melt butter into a small saucepan or microwave bowl. Remove from heat and whisk in Sagemary Salt,
tomato paste if using, lemon juice, and pepper. Set aside.

Arrange oven rack at the top level and heat broiler. Arrange bread slices in a baking sheet with sides and
broil bread until light golden, 1 or 2 minutes. Turn toasts over and broil second side for another 30
seconds to 1 minute, being careful not to burn. Remove pan from oven to a rack, brush toasts with some
melted Sagemary butter, arrange beef slices on toasts, brush with more melted butter. Return to broiler
and broil beef until cooked and browned on edges, 1 to 2 minutes. Remove from oven, cool a minute or
two, and serve.

Sagemary Salt Serving Suggestions

Sprinkle on or mix with:
•        Poultry. Especially roasted chicken or turkey.
•        Mix with Vanilla Salt (available at dididavisfood.com) and rub over the birds before roasting.
•        Pork. All types.
•        Beef. On a simple steak.
•        Veal. Try on scaloppinie.
•        Lamb. Grilled or in stews.
•        Seafood. Great on white fish.
•        Rice. All types of boiled and steamed dishes, pilaf, risotto.
•        Focaccia. The best! If rushed, buy prepared pizza dough, flatten, brush liberally with olive oil,
scatter with salt and bake.
•        Potatoes. Mashed, baked, stuffed, roasted.
•        Stuffing.  Perfect at Thanksgiving.
•        Winter squash. Purée, roasted, casseroles, soup.
•        Roasted tomatoes (see Fennel Thyme Salt suggestion card).
•        Sautéed apples or pears.
•        Italian dishes.
